Black Beans
2 cans black beans with liquid
1 medium onion, chopped
1/2 green pepper, chopped (optional)
2 garlic cloves, minced (optional)
1/2 cup olive oil
1/2 teaspoon salt
2 big bay leaves
1/2 teaspoon vinegar
In a little bit of olive oil sauté the onion, green pepper and garlic for 3 to 5
minutes in medium heat. Add the rest of ingredients and mix well. Simmer for 15 to 20
minutes. Enjoy it with cooked white rice.
